Starting with breakfast, upon request, the campsite restaurant will provide you with zero-mile delicacies and fresh bread for those who want it. There will be no shortage of ice cream, desserts and homemade cakes from 3:30 pm onwards. Hot cuisine with typical Tyrolean dishes (seasonal) will be available to you starting at 6 pm. It will also be possible to order gluten-free and lactose-free dishes.
You can accompany your meals with a selection of truly excellent local wines, renowned both nationally and internationally.
Below, we offer the recipe for one of the typical dishes of this splendid part of Italy: sweet plum canederli, a seasonal delicacy.
These are Knödel, large dumplings made from a spherical dough. They can be sweet or savory: here we offer the sweet version, consisting of a soft shell enclosing a delicious plum center.
As per tradition, they are cooked in boiling water and served with melted butter.
INGREDIENTS FOR 10-12 DUMPLINGS
– FOR THE DOUGH
1 kg potatoes (boiled and mashed)
300 g 00 flour + extra for the pastry board
45 g butter (soft)
1 egg yolk (about 40 g)
1 pinch of salt
-FOR THE FILLING
Pitted plums, approximately 160 g
Sugar to taste
FOR THE COVERING
50 g toasted breadcrumbs*
50 g brown sugar
1 level teaspoon ground cinnamon
200 g melted butter
METHOD
– DOUGH
While still hot, mash the potatoes in the flour you’ve sifted onto a pastry board and formed into a mound. Then add the lightly beaten egg together with a pinch of salt. Knead everything together with your hands until you obtain a soft but compact dough.
-ASSEMBLE THE DUMPLINGS
After the indicated time, take the mixture and, using some flour, shape it into a loaf, then divide it into 10-12 equal pieces.
Then, shape each piece into a ball and flatten it to a thickness of 1 cm. Place a plum in the center and seal the dough like a bag, ensuring the plum is completely enclosed. Repeat with all the remaining dumplings until all the ingredients are used up.
-COOK AND SERVE
Once ready, boil the dumplings for 10 minutes in salted water, then drain and coat them with a mixture of toasted breadcrumbs, sugar, and cinnamon.
Melt the butter in a small saucepan until it turns hazelnut brown and pour a spoonful over each dumpling. Serve the sweet dumplings with plums immediately and enjoy!
